White Wine & Thyme Poached Peaches

Summer ripe peaches gently simmered in white wine, until their delicate skins slip off into the blush-pink broth. Serve this incredible dessert with old-fashioned vanilla ice cream or as-is, just warmed through as if the peaches had sunbathed all day.

Delicate flavours and vibrant colours make this dish the perfect end to any meal.

Ingredients

Instructions

  1. In a medium saucepan, combine 2 teaspoons thyme, lemon juice, lemon zest, white wine, water and sugar. Stir to combine.
  2. Bring mixture to a simmer, drop in peaches and turn heat down to lowest setting.
  3. Place a round of parchment paper over the peaches to seal them in the syrup.
  4. Let peaches cook for 20 minutes.
  5. Turn off the heat, let peaches cool in their syrup.
  6. Once cooled, gently remove peaches from their syrup using a slotted spoon. Their skins should easily slip off.
  7. Serve peaches whole on their own or with vanilla ice cream. Garnish with a sprig of thyme as the stem and ladle the syrup over the peach.
  8. Syrup can be warmed up and served warm as well.

Notes:

Prepare the peaches up to 3 days ahead and store in the refrigerator. Simply bring the peaches to room temp and warm the syrup to pour over them before serving.
